Chicken Pot Pie

 For those of you who know me I am a disaster in the kitchen.  I never learned to cook as I am an only child whose mother still treats her like she is an infant and thus I never had to make food for myself.  This carried on into marriage as Paul cooks since he gets home earlier then I do during the school year.  Well this summer I decided since I have a lot more free time since I am only babysitting here and there that this would be the summer I tackle my fear of cooking.  I am terrible when it comes to cutting, cooking, pretty much anything that involves the kitchen so I was really worried about doing this on my own but I wanted to try which I think is a big step for me.  I figure as a mother (in the future) I will need to conquer this fear so what better time then now then to do it when its just Paul and I.  I looked up some recipes in AllRecipes.com and decided to try chicken pot pie.  The cook time was about an hour with prep and it took me almost an hour and a half (it took me 10 minutes to peel 1 potato) but all in all I think it was a success.  I did learn a few lessons along the way about pastry pies as well as cooking the vegetables longer to let them soften up but in the end it was a good meal and I made it myself and I couldnt be prouder.  I think I am going to try for a meal a week made by me.  I want to do tuna casserole next week (I have made that in the past but it didnt turn out well so Ill try again) and eventually I would like to attempt Shepard's pie if I can master mashed potatos first.
